Coconut Date Powerballs

The weeks prior to my due date, I wanted to have a bunch of one-handed snacks in the fridge to easily grab while I was busy with a newborn. I found a recipe and changed it a bit to work with what I liked and had around and they are absolutely delicious! I have to stop myself from eating all of them in one sitting!

The dates are so delicious in this, they are so sweet but the texture can deter some people away so this is a perfect way to eat dates without having that mushy texture. My food processor is pretty small so I had to add more milk than usual which is why I rolled the balls in coconut to help with the moisture and make it easy to grab and eat!

You can really make this your own and add whatever you want! Do you like walnuts? Replace it with the almonds! Don’t have flax seeds, leave them out. I didn’t even really follow the measurements, I just poured in what was needed to get the right texture to roll into a ball. I thought about adding mini chocolate chips or craisins but the dates give it enough sweetness that it doesn’t need any other added sugar!

Coconut Date Powerballs

Ingredients

  • 1 cup sliced almonds
  • 1/2 cup unsweetened shredded coconut, plus some for rolling balls in
  • 1/3 cup flax seeds
  • 1 Tbsp chia seeds
  • 1 cup Medjool dates, pitted and roughly chopped
  • 1-2 Tbsp lemon juice
  • 1-3 Tbsp unsweetened almond milk
  • Pinch of sea salt

Instructions

  1. In a food processor, blend almonds, coconut, flax seeds, and chia seeds into coarse meal.

  2. Add dates, lemon juice, pinch of salt, and almond milk. Process until mixture forms a dough that can easily hold together when pinched between your fingers.

  3. Roll into small 1 to 1 1/2 inch balls. Roll balls into additional coconut flakes. Store in an airtight container in the fridge.
